Applesauce Raisin BreadRecipe from: ????1 egg 1 cup applesauce 4 Tbsp butter or margarine, melted 1/2 cup sugar 1/4 cup firmly packed brown sugar 2 cups all-purpose flour 2 tsp baking powder 3/4 tsp salt 1/2 tsp baking soda 1/2 tsp ground cinnamon 1 tsp ground nutmeg 1/2 cup raisins 1 cup coarsely chopped pecans or walnuts In a large bowl, beat egg lightly; stir in applesauce, butter, and sugars mixing well until combined. Blend in flour, baking powder, salt, baking soda, cinnamon and nutmeg. Stir in raisins and nuts. Turn batter into a well-greased 9 x 5 inch loaf pan or a plain or fluted 1 quart ring mold. Bake in a preheated 350o oven (325o for glass pan) for one hour or until a wooden pick inserted in center comes out clean. Let cool in pan for 10 minutes and then turn out onto a rack to cool completely. |
